The maestro mezcalero behind this unique spirit is Adolfo Trinidad Rojas. He carefully slow-roasts the wild-harvested Agave cupreata over three days in an underground conical oven, using oak as firewood and palm leaves for insulation. After roasting, the agave is allowed to rest for another three days before being processed with an electric shredder.
The fermentation process takes place in handmade ayacahuite pine tanks with spring water, lasting about three days. This meticulous process culminates in double distillation in a homemade, hybrid cuascomite still, composed of stainless steel, ayacahuite pine, and a copper coil. The result of this elaborate process is a mezcal distilled in February 2022 with a distinct character.
