Perhaps fittingly for our inaugural rum barrel, we have sourced a rum from Barbados, one of the birthplaces of this spirit. This blend of full and flavorsome pot still and light and delicate column distilled rums from West Indies Rum Distillery was first aged on-site in Barbados for three years in ex-bourbon barrels before further aging another two years in Planteray’s cognac cellars in France in ex-Ferrand casks, and THEN finished in Saint-Estèphe Bordeaux casks. The result is a complex, pleasant, and VERY approachable rum which takes on distinct aspects of all three casks.
Nose: Cinnamon, Bananas Foster, redcurrant, stewed plum.
Palate: Arrives full and unctuous with vinous redcurrant and cranberry notes, old leather, and Grape Nuts. Adding water brings out more vanilla, coffee, and creamy tiramisu flavors.
Finish: Toasty French oak, cognac, bitter walnut, and a last twinge of tart red fruit.
