Tonic Syrup, which has its roots in historical beverages known as quinquina or calisaya, is distinguished by its key ingredient: quinine, derived from the bark of the cinchona tree. This vital component, traditionally used as a prophylactic against malaria, imparts a distinct profile to the syrup. To create this unique tonic, finely chopped cinchona bark is gently simmered alongside a selection of carefully chosen spices. This process infuses the organic cane syrup base with a rich, earthy flavor and results in a syrup with a captivating amber hue. Ideal for crafting an array of sophisticated cocktails, this Tonic Syrup adds depth and a touch of historical intrigue to each drink it graces.
Small Hand Foods, established in 2008 by Jennifer Colliau, marks its origin as the pioneering craft cocktail syrup company. Jennifer, while serving at The Slanted Door in San Francisco, sought to recreate a traditional Mai Tai using authentic Orgeat syrup made with real almonds, reminiscent of the pre-Prohibition era. After extensive experimentation, she perfected an Orgeat recipe that closely mirrored 1800s formulations. Expanding her repertoire, Jennifer introduced additional syrups including Gum Syrup, Pineapple Gum, Raspberry Gum, and Grenadine, and began supplying these artisanal products to bars and restaurants across the country. Small Hand Foods is committed to authenticity and quality, crafting syrups in the traditional 19th-century style: devoid of high-fructose corn syrup, preservatives, or any artificial ingredients.
