Tasting Notes
Pours an orangish-amber hue with good viscosity. On the nose I get cornbread, tobacco, honeysuckle, black tea, fruitcake and a touch of mint. The aromas are bold and spicy with a subtle fruitiness. On the palate I get notes of brown sugar, maple, black pepper, gravel, banana cream pie, cocoa powder, florals and a touch of sage. Both the palate and nose are a little intense so feel free to add water at your discretion to calm it down a bit. For me after a few sips at full proof the richer-sweeter notes start to come through and there is less need for water. Peerless is one of the few distilleries using a sweet mash during fermentation, most other distillers use a sour mash where by spent grain from a previous batch is used to lower the pH. This may account for some of the sweetness and the overall roundness midpalate. On the finish I get notes of rose water, candy corn and a touch of ginger. It’s a very smooth and creamy ending given how bold it starts out. Overall I think this whiskey exceeds its age quite a bit. The sweet mash technique and general cleanliness of the distillery shines through in the finished product.
